Recipes using our Bloody Mary Mixers

Bloody Mary Enchiladas  (Serves 4)

Ingredients
8 whole wheat or flour tortillas
1 cup chicken Stock
1 ½ cups favorite Twisted Mary Mix
2 cups of your favorite shredded cheese (I use Cheddar)
½ pounds shredded chicken, steak, or pork
½ cup diced onion
½ cup diced bell pepper
2 TBL Canola or vegetable oil
½ tsp salt
½ tsp black pepper
1 Tbl minced garlic


How To!
(L.A. Lagniappe – always preheat the pan and the oil before adding veggies to sauté properly-otherwise you are just soaking them in the oil!)
 
Sauté pepper and onion in the oil with salt and pepper over medium high heat until soft, about 5-7 minutes, stirring frequently. Add meat, salt, pepper, and garlic and reduce heat to medium and continue cooking for 5 more minutes.
Heat chicken stock and Twisted Mary mix over medium heat and stir in cheese until it melts and thickens the mixture some.
Divide meat and veggie mix into 8 equal portions and roll up into each tortilla
Place tortillas into pan about 7”x10” coated with cooking spray.
Top with sauce, letting it seep into corners and crevices
Top with additional cheese if desired
Bake in oven at 350 degrees for 20-25 minutes until browned and bubbly!

Fresh Red Sauce for Pasta!    (Yield about 3  cups)

1/2 Cup onions, quartered and julienned
1/2 Cup bell pepper, quartered and julienned
1 TBL minced garlic
2 TBL Canola or vegetable oil
½ tsp salt
½ tsp black pepper
4 large or 6 small Roma tomatoes, cored
And chopped, or a 12 oz can crushed tomatoes.
1 Cup  of your favorite Twisted Mary Mix or our L.A. Red Barbecue Sauce

How To!

Sauté peppers and onions over medium high heat until soft – about 5-7 minutes, stirring frequently. Add garlic and cook 2 more minutes.
Add tomatoes and cook 2-3 more minutes continuing to stir frequently.
Add Twisty Mary mix, stir, cover, and reduce to a simmer for 10 minutes.

Fresh Meat Sauce for Pasta

Ingredients
1 batch Fresh red Sauce for Pasta (see above)
1 cup your choice of cooked and browned
Ground turkey, Italian sausage, or ground beef

How to!
After adding Twisted Mary mix in step 3 of the above recipe, add the meat to the sauce, cover, and reduce heat to a simmer for 10 minutes as you do in the above recipe.

Bloody Mary Ceviche

(L.A. Lagniappe - The addition of your favorite Twisted Mary turns your Ceviche into more of a Latin style dish and adds a nice roundness to the flavor of the dish)

1 Lb 40-50 ct. shrimp, peeled &  deveined
Diced tomato
Diced bell pepper
Diced onion
Lemon juice
Orange juice
Chopped Cilantro
¼ t Salt
¼ t black pepper
Of your favorite Twisted Mary mix
Leaf lettuce (optional)

Add all ingredients except the Twisted Mary mix and refrigerate for several hours until the acid “cooks” the shrimp. Stir in Twisted Mary and serve in Martini glasses lined with leaf lettuce
